If you want to level up your gluten-free baking then using sorghum flour is a great choice. This is a versatile gluten-free flour ground from an ancient grain and can be used in anything from bread recipes to cakes to pastry to pancakes and this is a collection of my favourites. Each recipe has step-by step tutorials on how you can successfully make them yourself and none of them use xanthan gum or guar gum.
Sorghum flour derives from the grain of the sorghum plant which is naturally gluten-free. It's a flour I turn to again and again in my recipes due to its lovely texture and rich nutty flavour. Since it is a wholegrain flour it doesn’t bind very well, so it is most successful when it is blended with other gluten-free alternative flours. This helps with the stability and texture of your recipe.
