Have a jar of this Homemade Everyday Seasoning Blend in your spice drawer for quick and easy dinners. You can use it on roast potatoes, vegetables, grilled chicken or fish. Anything where you need a lightly flavoured and perfectly seasoned meal which is family friendly and quick to grab.

Iโve been mixing up jars of this Everyday Seasoning Blend for years. I have never really liked shop bought pre-mixes as I am a control freak and I often find they are overly reliant on dried herbs (which often taste too dusty) or have unnecessary sugar.
This seasoning blend is perfect for so many dishes and itโs so useful to have on hand when you want a cook a simple chicken breast for a solo lunch or a big batch of potato wedges for the whole family. Ideal for quick cooking and easy seasoning.

Ingredients Needed

Sea salt. The kind of salt you are looking for is the course flaky salt from brands like Maldon. It has a mild flavour and is typically a finishing salt but using it here means you can use your blend pre-cooking and then itโs gentle enough that you can sprinkle over salads or cooked meats. I donโt recommend swapping for table salt which doesnโt have the same nuance of flavour and is also much saltier per tablespoon.
Whole coriander seeds. I do find a difference in flavour if you grind your own coriander seeds rather than using pre-ground coriander. It tastes much fuller and fresher.
Smoked sweet paprika. The smoked vibe here adds a depth of flavour but if you find it too overpowering then you can use regular sweet paprika. If you want to add more heat then you can use hot smoked paprika.
Garlic powder. You can substitute for garlic granules if thatโs what you can get hold of.
Mustard powder. Do check your labels that your mustard powder is gluten-free. The reason I use mustard powder rather than whole mustard seeds is because if Iโm using a pestle and mortar then I canโt get the mustard seeds crushed as finely as I like and I like them to be obliterated for this seasoning blend.
Black peppercorns. This amount of pepper gives a good peppery vibe, you can always reduce if you need to.
How To Make Your Own Seasoning Blend
You can either use a pestle and mortar or a spice/coffee grinder. The electric spice grind will make the seasoning blend more uniformly powdery. The pestle and mortar result depends on how good you are at grinding (Iโm impatient and my blend usually has more texture with this method).
Pestle and Mortar. Grind the whole spices first so the coriander, peppercorns and salt. I recommend grinding one at a time for more control. Then place in a jar with the rest of the ingredients and shake together until fully combined.
Spice / Coffee Grinder. Place all the ingredients in the grinder and pulse for 10-15 seconds until finely ground.

Tips and Troubleshooting
Itโs not necessary to weigh out your spices here, the blend is balanced but not so finely refined that you canโt be a little fast and loose with your tablespoon measurements.
Measuring. The best way to measure using tablespoons and teaspoons is to dip the measuring spoon into the spice jar and level off the excess with your finger or a knife.
If you do want more texture in your seasoning blend and a little bit of crunch then use the pestle and mortar method as youโll have more control over the even crushing of the whole ingredients (and you can use whole mustard seeds instead of ground). The spice grinder will work but youโll need to lightly pulse for only a couple of seconds.
You can store the blend in a clean jar with a tight fitting lid and keep in a cool dark place for up to 2 months.
Label and date the jar so you know exactly when it was made up.
If you want your spice mix to last longer then you could refrigerate or freeze.
This mix makes about 140g so enough for two regular spice jars. I store in 180g standard jars.
How To Use Everyday Seasoning
Roasted Vegetables. 1 tablespoon per kilo. See my Perfect Roasted Vegetables recipe.

Pan-Fried Chicken Breast. 1 teaspoon per medium-sized chicken breast. Use a meat mallet to flatten the chicken to an even thickness then rub ยฝ teaspoon of seasoning on per side of the chicken with your fingers. Pan-fry for 4 minutes each side in an oiled pan.

Grilled Salmon. ยฝ teaspoon per medium sized piece of salmon. Rub the seasoning blend on then place under a hot grill for 10 minutes.

Potato Wedges. 1 tablespoon per kilo. See my Homemade Crispy Gluten-Free Potato Wedges recipe.

Sweet Potato Fries. 2 teaspoons per 500g. See my Homemade Crispy Gluten-Free Sweet Potato Fries recipe.
Other uses
Breadcrumbs or coatings. You need about 1 teaspoon per 50g breadcrumbs. These are useful for Homemade Chicken Nuggets, Chicken Schnitzel or Fishcakes.
Scrambled eggs or omelettes. You donโt need much, just ยผ teaspoon before whisking your eggs, it really adds a lovely savoury depth without being overpowering.
Rice or quinoa. Add 1 teaspoon per 200g cooked grains with butter or olive oil for a delicious side dish.
Salad dressing or dips. Use ยฝ teaspoon in your homemade dressings or dips.
Houmous. Stir in ยฝ teaspoon into a 200g pot of supermarket houmous, spoon out into a serving dish and drizzle over extra virgin olive oil to make it a bit more special.
Pork Chop. Rub 1 teaspoon of seasoning all over the pork chop and cook under the grill or in the air-fryer.

FAQs
With any homemade seasoning it tastes its best within 2 months of making it up.
Store in a cool dark place like a larder or pantry. Chilling isnโt necessary with typical UK humidity.
If your hand slipped in preparation or itโs just not the right balance for you then you can easily fix by adding more of the other ingredients to compensate.

Ingredients
- 1 ยฝ tablespoons sea salt
- 1 tablespoon whole coriander seeds

Instructions
Pestle and Mortar
- Crush the whole ingredients one at a time in the pestle and mortar. Begin with the sea salt, followed by the coriander seeds and finally the black pepper.
- As you finish each one then decant into a clean jar.
- Once youโve crushed all the whole ingredients, then add the other spices into the jar and shake vigorously.
- Label the jar and store in a cool dark place until needed.

- Place all the ingredients in the grinder and pulse for 10-15 seconds until finely ground.
