Cuisine: British
Servings: 10 servings
Calories: 7kcal
- 1 ½ tablespoons sea salt
- 1 tablespoon whole coriander seeds
- 1 tablespoon smoked sweet paprika
- 2 teaspoons garlic powder
- 1 teaspoon mustard powder
- ½ teaspoon black peppercorns
Pestle and Mortar
Crush the whole ingredients one at a time in the pestle and mortar. Begin with the sea salt, followed by the coriander seeds and finally the black pepper.
As you finish each one then decant into a clean jar.
Once you’ve crushed all the whole ingredients, then add the other spices into the jar and shake vigorously.
Label the jar and store in a cool dark place until needed.
Different methods. You can make this recipe using the hands on method of the pestle and mortar or the quick and simple spice grinder. The pestle and mortar method usually gives you a little more texture and crunch to your seasoning blend as it isn’t as efficient as the spice grinder.
Yield. This recipe yields 40g which is just enough to fill an average sized spice jar. I usually double the recipe as I use this seasoning a lot and store it in an 180g jar so it has lots of room to shake it up.
Measuring. The best way to measure using tablespoons and teaspoons is to dip the measuring spoon into the spice jar and level off the excess with your finger or a knife.
Mustard powder. You can use whole yellow mustard seeds instead but then start with 2 teaspoons.
- Uses:
1 teaspoon used as a rub on grilled / pan-fried chicken breast.
½ teaspoon for a piece of salmon.
1 tablespoon for Perfect Roasted Vegetables.
1 tablespoon for Crunchy Potato Wedges.
2 teaspoons for Crispy Sweet Potato Fries.
Storage. Keep the blend in a cool dark place for up to 2 months (average UK humidity). If you are in a very humid climate then you can store in the fridge or even the freezer.
