Stove Top Spiced Rice Pudding

- 100 g short grain rice
- 1 litre whole milk
- 60 ml double cream
- 150 g caster sugar
- 3 tablespoons sweet rice flour
- ¼ teaspoon sea salt
- 2 teaspoons vanilla extract
Spice Mix
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon ground allspice
Pour the rice and 500ml of the milk into a saucepan and bring to the boil.
Place a lid on, lower heat and simmer for 20-25 minutes until the rice has absorbed the milk . Stir every once in a while.
Pour in the rest of the whole milk (reserving 50ml) with the cream and sugar. Stir and bring to a boil.
Whisk the sweet rice flour into the remaining 50ml milk, then stir into the rice pudding.
Add the salt and vanilla extract and cook for a further 15 minutes.
Remove from the heat and then spoon into 6 x 200ml jars
Whisk together the spices and then sprinkle evenly over the top of each rice pudding. Screw the jars on then refrigerate until ready to eat.
